This is my go to roll recipe. I put all of the ingredients in my bread machine, start the dough cycle, and in 90 minutes take out the finished dough that is SO easy to work with. It doesn't stick to your hands when making them into balls, and they always turn out beautiful. They freeze amazingly well too.
Bread Machine Rolls

1 cup warm water (110 degrees F/45 degrees C)
1/4 cup dry milk powder
3 TBSPs white sugar
1 tsp salt
3 cups bread flour
1 (.25 ounce) package active dry yeast or 1 1/2 tsp bread machine yeast
1 egg white
2 TBSPs water
1. Place the butter, water, dry milk powder, sugar, salt, and flour in the pan of the bread machine in the order recommended by the manufacturer. Set on dough cycle; press start.
2. Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into 12 to 15 equal pieces, and form into balls. Place the balls on a baking sheet lined with baking mat OR greased (Or if baking in a 9x13 inch pan, 12 balls with the pan greased.) Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
3. In a small bowl, mix together the egg white and 2 TBSPs water; brush lightly onto the rolls. Bake in the preheated oven for 12-15 minutes, or until the rolls are golden brown.
